Peanut
Brittle
2 cups sugar
1 cup light corn syrup
2 cups raw peanuts
2 teaspoons baking soda
2 tablespoons butter
1 teaspoon salt
Cook sugar and corn syrup together until sugar is dissolved.
Add peanuts and cook until mixture turns golden brown. Add butter, salt and baking soda.
Stir and pour onto buttered cookie sheet,
spreading quickly to cover surfaces.
Break into pieces when cool.
Also try using other kind of nuts : cashews, pecans, macadamia, almond etc.
For little gifts, put several in a cellophane bag, add a pretty bow et voila! |

Gingerbread
Cookies
1 egg
1/4 cup honey
7/8 cup packed brown sugar
1 teaspoon ground ginger
1 teaspoon cinnamon
1 teaspoon allspice
1/2 teaspoon cardamon
1/2 cup butter
1 teaspoon baking soda
3 cups all-purpose flour
1 1/2 cups confectioners' sugar

Heat the oven to 375 degrees. Melt a little of the butter & grease baking sheet using a pastry brush.
Put the butter, white sugar, & honey in a saucepan and stir them over low heat until they have melted.
Sift the flour, spices, & baking soda into a mixing bowl. Add the melted mixture from the saucepan and egg.
Mix everything together and knead it into a ball.
Chill the dough for 30 minutes minimum.
Roll the dough until 1/4 inch thick.
Use cookie cutter to cut out shapes. Put the cookies on baking sheet.
Put raisin eyes and buttons & bake for 10 to 15 minutes until brown on the edges.

Pizzelle
Pizzelle is a very special Italian cookie made at Christmas time.
It’s cooked like waffles but it has a cookie texture
You need a special iron to make them.
4 lg Eggs
1 c Granulated sugar
1/4 ts Salt
1/2 Unsalted butter
2 c All-purpose flour
1/4 c Cocoa powder
1/2 ts Cinnamon
1 tb Baking powder
Whisk the eggs with the sugar and salt until light. Melt the butter and stir in. Sift together all the remaining ingredients and fold in
Heat Pizzelle iron and place 1 teaspoon of batter
on each imprint. Close iron and bake 30 seconds. Cool on racks.
